In an effort to save time and money while also eating healthy on the go, I’ve been working on a few recipes that are easy to prepare for the whole week. Breakfast is hard for me. If I don’t start my morning with something savory and satisfying, I know that my day is only a few decisions away from going off the rails.
Enter my latest creation: Cheesy Sausage Egg Muffins.
I scoured the internet and reviewed my Pinterest boards for hearty breakfast recipes. What I found was a lot of over-complicated ideas chock-full of unnecessary ingredients and calories! I knew that I wanted something savory, full of protein, and HEALTHY. After a couple of tries, I think I’ve found the perfect grab-and-go-breakfast recipe.
What you’ll need:
- 8 large eggs
- 1/2 cup of reduced fat shredded cheddar cheese
- 1 bag of Jimmy Dean Fully Cooked Turkey Sausage Crumbles
- 2 cups broccoli
- 1/4 tsp garlic salt
- 1/2 tsp pepper
- 1/2 tsp onion powder
- 1/4 tsp dried oregano
- Non-stick cooking spray
- muffin tin
Make it happen:
Pre-heat your oven to 350 degrees.
Chop broccoli into fine pieces.
Beat eggs in large mixing bowl. Add cheese, sausage crumbles, broccoli, garlic salt, pepper, onion powder, and oregano. Mix well until all ingredients are combined.
Spray muffin tin with cooking spray and evenly disperse egg mixture into 12 portions. Bake for 30 minutes on the center rack of the oven. Allow to cool and gently remove egg muffins from the tin.
Disclaimer: I have not yet found the cleanest way to remove these muffins from the tin. I’ve been clearing them from the pan with a butter knife, but plan to try using a silicone pan in the future.
